This is as opposed to earlier "batch fired" systems which fire all the injectors at the same time once per crank revoulution. Sequential injection is more precise which aids in producing cleaner burning motors for reduced emissions and it produces better response from idle through the lower rpms. Racing EFI applications are often batch fired because less sensor inputs are required keepin it simple and because racers are not much concerned with idling, low rpm operations and emissions.
